History of Springerle Cookies

Springerle Cookies from County Line Sugar BushThese dense cake like delicacies known as Springerle cookies date back to the 14th Century, with the oldest known mold from Switzerland.

The original presses now in museums or private collections were carved in clay, mental or wood. Biblical scenes were some of the earliest images of Springerle, and were used to educate those who could not read or write. Later other scenes were carved depicting images of holidays, events and scenes of everyday life. They also used them for Weddings, births and tokens of love. Some exchanged Springerle, like we exchange greeting cards today. Now you can make up "your own stories" with each cookie, and then enjoy the delicious lemon flavor.

To maintain freshness store in a tin, will last 2 months. (Will gradually become harder)

To save as an ornament, remove cookie from cello bag and allow to air dry. Store ornament in a cool and dry place. To attach a ribbon for hanging the ornament, mix one egg white and fine sugar to a paste; place a dollop on the back of cookie; press ribbon loop into mixture; let dry thoroughly until ready to hang! Cookie will last many years as an ornament.
